Sweet potato and cauliflower dahl

This is a warming spicy dish.  Great for when it's cold out.

Ingredients (serves 4)

  • 500g of split peas or chana dal, tinned or dried and then soaked and cooked.

  • 2 sweet potatoes

  • 1/2 cauliflower

  • 2 onions

  • 3 cloves of garlic

  • 1 tablespoon turmeric and 1 tablespoon cumin

  • 1 tablespoon ground coriander

  • 1/2 teaspoon fresh chilli, chilli powder or flakes (depending on how hot you like it)

  • 1 teaspoon garam masala and 5 cardamon pods

  • Sea salt and pepper (to taste)

  • Small bunch of coriander

  • 1 lime

  • 1 pint of stock

  • 1 tablespoon of coconut oil

  • Coconut yoghurt

Instructions

  1. Saute the onion and garlic in a little coconut oil until soft.

  2. Add all the spices and seasoning and cook lightly (be careful not to burn). Crush the cardamon pods and add these too.

  3. Add the cooked beans/chana dal and cook for a couple of minutes

  4. Add the sweet potato, cauliflower and stock

  5. Simmer lightly until all veggies are soft.

  6. To serve, add some chopped coriander, a dollop of coconut yoghurt and some lime wedges.

  7. Serve with brown rice or green veggies
