A beautifully rich dairy free/gluten free chocolate cake
250g ground almonds
5 organic eggs
4 tbsp. raw cacao powder
2 tbsp. honey
1 tsp. baking soda
100g chocolate chips or broken up dark chocolate
Boil the whole oranges for an hour in a saucepan of water. Leave to cool.
Place two of the cooled whole oranges (with peel) in blender or food processor along with all other ingredients (except chocolate chips/flaked almonds). Blend well.
Stir in chocolate chips/broken chocolate
Add mixture to a greased cake tin.
Cook for 50 minutes at 170 degrees.
Set aside and allow to cool.
For decoration, finely slice the last orange and bake in the oven at 100 degrees for 20 minutes.
Toast flaked almonds in the oven for 10 minutes.
If you want some frosting. Add 100g of dark chocolate to 100ml coconut milk in a pan and melt together.
Add to the cooled cake and top with orange slices and toasted almonds.
